Wow...
The Recipe Network
I always lose my recipes and my memory sucks. Furthermore, I am not a naturally gifted chef who can work from memory. So, this will be the place I post my recipes as I make them and will now always be able to find them again. Who knows, maybe you'd like to try some of these...

Lemon and Yogurt Marinated Grilled Chicken
What to do when we want to eat Shish Taouk chicken, but my favorite Mediterranean grocery store is closed for the night? Look on the Internet for recipes to make our own.
Before I even found any Shish Taouk recipes, I came across an idea for grilling chicken with a lemon and yogurt marinade so this is what we ended up trying. It was ridiculously simple and ridiculously good.
Ingredients:
1/2 cup plain yogurt
juice of one lemon
4-5 garlic cloves, chopped
1 tbsp lemon zest
1 tbsp paprika
1 tbsp olive oil
1 tsp dried italian spices (or mix up some dried basil and oregano, thyme, majoram and rosemary)
1 tsp salt
1 tsp ground pepper
2 chicken breasts
To make the marinade, mix all of the above ingredients together. Well, except for the chicken. For the chicken breasts, I sliced them like cutlets to make for thinner pieces of meat. Coat the chicken breasts with the marinade and leave to marinate for as long as you can. Overnight is great, or for a few hours... Well, I had one hour before dinner and they still turned out great!
Fire up the grill. When hot enough, reduce to medium and get the chicken on there!
Enjoy, and please let me know how it turned out!
